Vineyard:Ærkeengel - Danish for Archangel. Charlotte’s beautiful Mum was half Danish. Danes are wonderful. This wine is for her mother. Fruits are from Deanery Vineyard, Balhannah - Adelaide Hills Vintage Condition: A fair vintage. Setlled weather over flowering allowing for a decent crop to set. A heat spike around Christmas of 3 days over 40C – this resulting in some slight sunburn at the top of the block, the majority of the fruit is in dappled sunlight due to an intentionally over hanging canopy so sunburn was not widespread. A dream ripening period with no weather events. Grape Variety: 100% Semillon - Region: Adelaide Hill Color: medium gold-hued Winemaker’s Comment: No skin contact, destemmed and pressed toFrench barriques. The juice is oxidised with nosulphur used prior to ferment, and the ferment is allowed to start naturally without the addition of yeast.The wine stays in these barrels through ferment and maturation on full lees – 19 months total. The wine was bottled at the end of 2021 and bottled aged for 12 months before release.
Bottled unfined and unfiltered with minimal Sulphur dioxide addition. No other adds.
