Owned Vineyards with organic farming, worked with minimal intervention and sustainable viticuture. Vine Age: 20 to 100 years old Soil: Structural planes on marl and limestone situated at a 600 meter altitude. Shallow soils, low incline to flat slopes with a sandstone bedrock and marl packs at very shallow and low intensity (25-50m). The soils dedicated to this wine are special case in limestone lithology, with sandstone of a medium to coarse grain. They are brown soil with a tendency towards red and a 40% level of sand and high in iron oxide. Harvest: 100% by hand in 15 kg boxes Barrel: French oak barrels Alcohol: 14.5% Bottled: August 2021 Output: 22,050 bottles Winemakers Comments: Spontaneous fermentation in open stainless vats of different capacities, light punching down, malolactic and aging in French oak barrels for 9 months. Color : Ruby red Style/Palate: Spicy on the palate with ripe fruit and powerful tannins. Tasty sincere. Aormas: Aromas of ripe fruit, red fruit and mountain herbs. Food Pairing : cured cheeses, meats, salads. Drinkable Period : 2022 - 2028 Expert Comment :This has a heady perfume with something earthy, floral, with tons of aromatic herbs (rosemary, thyme, lavender), nutmeg, clove and other spices reminiscent of a vermouth, with notes of ink, a bit mysterious and attractive, with notes of black fruit.
