Wignac – Cider Bio Le Lièvre de Wignac

Winery Information: Wignac is located in Ardennes, France. Aims to reinvent the way of drinking: healthier, organic and responsible. Wignac products are made by 100% organic apple juice with no sulphite. They are 100% natural, no added sugar and gluten free.
Ingredients:
100% Pure organic apple Juice
- 65% of cider apple juice: Different French varieties: Douce Moën, Bedan, Bisquet, Kermerrien, Clos Renaux
- 35% of eating apple juice: Different varieties: Royal Gala, Jonagold et Golden
Alcoholic Fermentation: Natural apple cider yeasts, and natural active dried yeasts.(Yeasts do not appear on the ingredient list as they are only technologic auxiliaries).Fermentation in refrigerated steel barrel.

Gas: Alimentary CO²: 4.5 gr/liter, equal to 2250 HP and to 3.5% of the total volume of the bottle
Sugar : Residual sugar after fermentation : 40 gr/Liter

Process
- 1) Apples harvesting and transport to company
- 2) Destemming and Pressing of apples
- 3) Additives: yeasts: natural apple cider yeasts and natural active dried yeasts
- 4) Fermentation in steel tank at controlled temperature of max 20°C
- 5) Filtration and clarification
- 6) Gasification & Bottling
- 7) Pasteurization
- 8) Labeling
Aormas/Palate:  Full-bodied aroma.  The palate is an explosion of flavors. Finish is nice, rich and smooth.
