Malolactic
fermentation takes place 50% in concrete vats and 50% in barrels. Then separately aged in concrete vats and barrels for 14 months. Aging in barrels, 75% French oak, 25% American oak. 50% New and 50% Second use. Color : Garnet Cherry color. Style/Palate: All very well structured balanced, pleasant feelings of raspberries, cherries, charcoal, cinnamon and toasted coffee.
All this very well integrated with a very long finish. Aormas: aromas of blueberries, blackberries, cocoa, red caramel. Food Pairing : Paring with “spoon dishes”, roasted lamb and suckling pig, also with red meats. Drinkable Period : Expert Comment : This has aromas of wild raspberries, blueberries, potpourri, bark and walnuts. Medium-bodied with fine tannins and fresh acidity.
