Vineyard:I skipped the 2020 vintage of Beyond the Horizon, it was post the fires in the Adelaide Hills in December 2019 and I made very little Shiraz. When the 2021 Love me love me Shiraz was bottle, winery held back a portion to produce the wine. This fella is worth the wait. Vintage Condition: Warm days with a good dirurnal range during the ripening period. No major weather events in the final weeks allowed the grapes to hang until desired flavor ripeness was achieved. Harvested just prior to a large rain event. Grape Variety: 100% Shiraz - Region: Adelaide Hill Winemaker’s Comment: 30% whole bunch with remaining 70% crushed on top. Wild ferment. 2 pumpovers per day for 4 days then locked up under gas for a further 6 days. Pressed to oak, 65% new French – balance of oak 5 years plus. Remained on full lees until bottling. Not sulphured post malic but sulphured 1 week prior to bottling. Total time in oak 21 months. Unfined. Unfiltered. Style :Elegant red wine Aroma; Dark brooding berry fruits, the wine shows toast, spice and vanilla with bright raspberry and blueberry notes. Palate: silky tannin with a structure that wraps up the beautifully dense fruit into an elegant package Alcohol: 13.5% Ageing: French oak Food Pairing: beef, lamb, game and poultry.
