Winemakers Comments: Vintage 2024 was just about the perfect vintage. Warm but not too hot, and bone dry during the growing season, was welcome change from the past couple of years, allowing the fruit to ripen steadily. Meanwhile, cool nights kept acids and freshness high. With decent yields across the board, we had flexibility in our winemaking, selecting the best parcels and blending to make a suite of wines we are super stoked with, and excited to share with the world.
The Hell Series wines represent our experimentation with winemaking techniques, and allow the fruit to express different, unique and compelling characteristics.
Carbonic maceration is used in this wine to create a drink that is light and fruit forward, with a brightness and acid profile that is all about drinkability. The Nero dAvola and Aglianco are hand harvested separately, whole bunches dumped straight into one tonne fermenters, sealed up, pumped full of CO2 and left alone for 2 weeks. After this time, the musts are pressed off skins to finish ferment, the wine then left to go through malo and elevage in neutral French hogsheads.
For the Negroamaro, we crush and destem, then allow to sit overnight on skins before pressing off for fermentation, making a darker, Italianate rose.
Style/Palate: bright and Light body, crunchy acidity, and a very light line of tannin

jubey carbonic bubble gum, sour red cherries, dried cranberries/rum & raisin chocolate, vanilla.
Food Pairing: roast chicken, caramelised onions, and soft cheese.
