Whilst not without its challenges, the warm conditions meant that the hardy, heat tolerant Southern Italian varieties that we work with proved their worth, developing primary fruit depth whilst holding natural acidity well. After several years of cooler conditions, the 2025 wines are punchier than recent vintages, defined by bolder flavors without sacrificing thirst slaking drinkability Wild fermented in stainless steel, each variety is were picked and fermented separately –6 or 7 days before being pressed off, with blending just prior to bottling. Style/Palate:Bitter and dark whilst bright and juicy – light red taken to another level. Cherry-focused fruitiness gives way to spice and tannin – some serious stuff. Talking red plum, herbaceous, clove, nutmeg, cinnamon spice, with medium tannin to bring structure and mouth feel. Aormas: Cherry, red plum, herbaceous, clove, nutmeg, cinnamon spice
