Winemakers Comments
2023 was the coldest, wettest and trickiest years we’ve faced. Endless rain on the east coast over the last few years came to roost with the Murray River flooding to the second highest levels in recorded history in the Riverland. Persistent rain through Spring and early summer meant not only was harvest delayed by several weeks as fruit ripened slowly, but disease pressures were high with winemaker and grape grower nerves being put to the test. Luckily a healthy vineyard and some warm sunshine in early autumn helped the fruit develop nicely, producing a suite of pretty, more subtle wines this year
The Hell Series wines represent our experimentation with winemaking techniques, and allow the fruit to express different, unique and compelling characteristics.
Fiano is a variety we
ve lusted over for a long time, and in the last few years have had the opportunity to work with in new exciting ways. Set to become a mainstay in the Hell range, upon receiving the fruit into the winery, we split it into two parcels – half was pressed off straight away as a juice ferment, the balance fermented on skins until sugar dry. Elevage in a combination of Slavonian oak foudre and neutral French barriques for 9 months before final blending and bottling
Style/Palate: the palate opens up into a candied citrus dream – blood orange juiciness and acid offset but a well developed, deep fruit feel. Grippy tannin interplays well with the acid to provide glorious length and mouthfeel
Aormas: white floral, jasmine flower, pineapple and honeysuckle
Expert Comment:
Food Pairing : fatty, oily, salty food – fried zucchini flowers, or sweet and sour pork
