Background : located in Maury, Roussillon South France, make dry 'natural' wines with no technological trickery.
Vineyard information : Organic agriculture since 2010 vintage. In Biodynamic Culture since 2010. For soil, plowing and unhinging/year, cleaning feet to pickaxe. Sulphur and copper-only plant health treatments (put them in water and spray plant). Spraying medicinal on soil and plant.
Harvest : August 30, 2019 – Sept.07– Syrah – 100%
Soil : Black schist - mica-schist – clay-limestone

Annual Output : 7,000 bottles

Color : Golden Yellow
Style/Palate : Mineral White Wine made by red grape, slightly salty, suave, with a greedy acidity.
Aroma : Red fruit, Green immature Bananas, citrus, fruity, note of toast & ripe strawberry.
Alcohol : 12%    Residual Sugar : 3.5 g/L,   SO2 : 40 mg/L,   pH : 3.08
Drinkable : 2019 ─ 2024
Vinification : Harvest grape at 10.5% potential. At this level, the color is not ripened. With the pneumatic press which work under 1 bar of pressure to extract grape juice 65% very slowly and gently. The juice is very clear with a little pink color. Then during fermentation, the color fall down with the lies.
Native yeasts, Fermentation in concrete vats (5400L). Malolactic Fermentation. Breeding on fine concrete lees for 6 months. Bottled in February 2020. Bottled : Without fining or filtration. 20 mg/l sulphur at bottling according to analysis.
