Style : Numerous streams formed by its large number of tiny bubbles create a truly spectacular effervescence. It's white crown, abundant and long-lasting, contrasts with its pink background, highlighting its magnificent mousse.
Palate : Exuberant in palate. The effervescent mousse that is released on tasting is intense and creamy. It caresses the inside of the mouth very gently, releasing all of it's rich aromas.
Aroma : Delicate and intense. In it, we can find of cherries and strawberries, surrounded by hints of honey, toast and floral memories. It has a very unusual nose in which freshness dominate over vinosity.
Alcohol : 12% Aging : 12 months in bottle
Winemaker's Report : made by free run juice with a slight soaking. Grapes are stacked together after destemmed, and the stacked weight releases some juice from the fruit, which is free run juice.
Organic farming, manual harvest from mid-August to October in small box, after careful selection of the best ripe grapes, cold soaked for 4 hours, fermented in stainless steel tanks at 20℃ . Aged in bottle for 12 months before release.
Food Pairing : salmon sauce, strawberry smoothie and foie gras.
