Winemaker’s Report: Grapes are harvested by hand for small boxes before they are pressed on a pneumatic press, without desengace. Cold decanting, followed by fermentation in barrels of French oak with controlled temperature and regular bâtonnage up to one month before bottling, which occurred in July 2019.
Élevage: 11 months in used French oak barrels, with bâtonnage regular. Six months aged in bottle .
Food Pairing: Ideal with shellfish, fish, chicken, and cheese
Expert Comment: It has a long and fine finish. It's quite gripping, actually. It shouldn't have a problem aging for a decade, probably more.
